I skipped Inspiration Sunday last week but only because it never registered on my radar that it was Sunday. It wasn’t until Monday afternoon that I realized what day it was and that I’d completely forgotten all about my IS post. Swiss cheese for brains here, people!
A tweet from a Twitter buddy the other day about slow cookers struck me like a lightening bolt. I’ve been craving something so deeply but haven’t been able to put my finger on it. I want, no, I need, slow cooker food in my life! There’s just something about loading my crock pot up and coming back, hours later, to an amazing meal. Great food with minimal effort? Oh yeah, sign me up!

This recipe for beef and broccoli from Cookingclassy.com looks amazing! I won’t use the sesame seeds nor will I use more than a teaspoon of sesame oil at the most, but this will be devoured soon.
This breakfast scramble from Damandalynn is calling to me. Can you hear it? I still have a problem ‘doing’ breakfast but if it’s ready when I get up I’ll easily partake without a second thought! Someone said the recipe as written is too runny. I don’t know if she’s since ammended the recipe but I plan to cut the milk in half just because that looks like a bit much to me. I’ve only ever made oatmeal in the crock pot for breakfast so this one has me all sorts of excited!
With beef prices so high we’re working more chicken into our meals and this one looks spot on! Easy crockpot chicken fajitas from Eatathomecooks looks exactly like a crowd-pleaser for my brood. As with the other recipes I’ve featured today it’s easily adaptable to be gluten-free with simple substitutions I have on hand. Plus, I make my own taco seasoning anyway. We prefer it over the packets!
