Tossing the stems makes a HUGE difference

Monday I made kale mash and we liked it! I was pretty shocked and stoked given we’ve never liked anything I did with kale before this. Turns out removing the stems and spines really does make a HUGE difference!

The bag of kale we bought was already chopped which meant there were approximately 1.984,847.3 spines that needed to be removed. Took a lot longer than I thought but was well worth it in the end. if they’d had kale in bunches (uncut) it would have made this dish even simpler, not having to sort through every single piece of kale in the bag!

This is the only other picture I have of the kale mash. I was both nervous (we wouldn’t like it) and starving like mad. Didn’t think to take a quick picture of the finished dish. When I make this again I think adding some chopped garlic would be a great addition. Actually, roasted garlic smashed into this would be amazing on crazy levels!

I still have some of the kale in the fridge and I’m curious if we’d still like it in chicken in a pot. I roast a whole chicken that’s been rubbed down with whatever spices hit my fancy on top of chopped potatoes, onions, celery, carrots, garlic and tomatoes and a little broth … all in one pot. It’s a great one dish supper and we LOVE it! You can do this with several cuts of meat such as chicken pieces, pork or beef roasts, turkey breasts, … most hunks of meat would work well I’d think. I’m doing this with a whole chicken Sunday and plan to use the rest of the kale I have in it. I’ve used spinach before and it was fine.

I’m looking at a recipe for chickpeas and kale soup but I don’t think we’d like it as written. I also wonder if I’d be pushing it a little too soon, making soup with kale in it. Some in my brood are rather fickle when they think they’re eating healthy so I have to ease them into it. Or just give them the choice of ‘eat or don’t’ but that never results in fun.

Anyway, I’m excited about adding more kale into our diets. Got any favorite recipes or ways to eat it?
